THE LEARNING GUIDE TO THIS ISSUE
Dear Grownups, • Summer is a great time to cook with your child, and this issue is full of fresh fruit, which is an especially appealing ingredient for kids (and adults too). Give your child a little pad of sticky notes and let them mark out their favorite recipes. Then pick one, figure out which ingredients you already have, and plan a trip to the store or farmers’ market for the rest. Lots of learning will happen in the kitchen—but it definitely won’t feel like school!
Celery with nut butter • RECIPES JUST RIGHT FOR THE LITTLEST COOKS
Blueberry Smoothie • This smoothie is our summer classic. It’s creamy-sweet from the banana and just a little tangy from the yogurt. Plus, it’s gorgeously purple from the blueberries—although if you’ve got other berries in your refrigerator, feel free to use those instead.
FRUIT FORWARD • If you only think of fruit as a snack, think again. We’ve got recipes here that showcase everything fresh, juicy, and colorful about the season—and that you can serve as a just-right meal on the hottest days. Get as creative as you like, and feel free to swap in different fruits for the ones listed in the recipes.
Watermelon with Feta • We love the contrast of the creamy, salty cheese with the crisp and juicy melon—and we’re pretty sure you will too. Kid Recipe Tester Chananya said, “We thought that only my mother would like it, but all of us ate it and even had seconds! It was a great blend of salty and sweet.” Serve this refreshing salad as a side dish or a light main course.
Peach, Cucumber, Tomato, and Avocado Salad • This looks like a regular chopped salad, and so the peaches might surprise everybody! (In a good way, of course.) If you cut the ingredients into smaller pieces, this makes a delicious salsa to serve with whole-grain chips or nachos. Kid Recipe Tester Linnea loved this recipe, and her family did too. “It was a very delicious and fresh salad,” she wrote in her notes.
Apple and Nut Butter Sandwich • We put fruit in lots of sandwiches—we love turkey and cranberry sauce, pears in our grilled cheese, and jam on our ham—but this might be the simplest one of all. An apple has all the sweetness of jelly, but it also adds a delightful crunch (and a whole lot of nutrition).
Chicken with Fruit Salsa • This summery main dish pairs lemony roasted chicken with a tangy fruit relish. Feel free to grill the chicken instead, or substitute your favorite kind of fish. Kid Recipe Tester Amine wrote, “I never thought of eating fruit with meat but it was tasty. Everyone liked it.”
Rainbow Fruit Salad • This recipe makes the most of fruit’s colorful nature and the fact that it comes in the full spectrum of hues.
WHAT’S DIFFERENT?
SEE HOW TO MAKE DIPS • For each of these combinations, you can put all the ingredients in a food processor and puree or put them all in a bowl and mash them with a potato masher or fork. Serve with carrot and celery sticks (see page 5) or other vegetables, or whole-grain chips or crackers. The dips will keep in a covered container in the refrigerator for up to 3 days.
ALL ABOUT CORN
Why does popcorn pop?
Homemade Popcorn • You can make popcorn yourself, right on the stovetop! And it’s whole-grain and inexpensive, too. Our method is easy once you get the hang of it: Just read through the steps before you start, then try to follow them pretty exactly.
